Birchtree’s approach to catering is building menus sourced from local and sustainable ingredients, featuring foods prepared fresh and cooked from scratch. Our base menu options include our staples that are excellent all year, with seasonal tweaks to stocks, sauces, jams and produce. Our highlight menus are the best of the season, with dishes created specifically to embrace the bounty that our local markets have to offer.
Our sourcing is based on the idea that local, small and sustainable are the three pillars that we measure the quality of our ingredients by. Our favorite items come from vendors that we know personally, like Bryan of Fishtown Seafood, Kevin of KP’s Fine Meats, and Katie of Tlush Family Farm. When we purchase from them, it feels great to know that we’re supporting and spending money on the people and foods that we love.
Local sourcing can be unpredictable due to weather patterns and farming conditions, so the Birchtree kitchen stays flexible throughout our menu planning. We confirm produce and herbs the week of your event, and we aim to simply give you the best flavors available.
